Yamamotoya Miso Nikomi Udon is a series that brings the taste of Nagoya's celebrated long-established shop into your home. Made with traditional Hatcho miso—aged from carefully selected soybeans and salt alone—it delivers a soup rich with deep body and umami, crafted with artisan care.

Yamamotoya Okute — A Century-Old Legacy
For over a century since its founding in 1925, Yamamotoya Okute has honestly crafted miso nikomi udon in Nagoya. Today, together with the fifth generation—Hironori and Kosuke Aoki—the shop upholds its historic legacy while creating new value and taking on the challenge of sharing Nagoya's traditional miso nikomi udon with the world.
Its one-of-a-kind depth—born from artisans' hand-kneaded traditional methods and carefully chosen Hatcho miso—has earned recognition on the global stage, including first place in the Japanese food category on a popular Hong Kong gourmet site. What is Miso?
Miso, a Fermented Food

Miso is a fermented food—like cheese or yogurt—and a traditional Japanese seasoning. Hatcho miso in particular uses only soybeans, aged over two years in large wooden barrels, resulting in a highly nutritious miso rich in minerals such as protein, calcium, and magnesium.
Because it holds up to heat, its body and umami deepen the longer it simmers. In fact, it is lower in salt than typical miso, offering a mellow yet profoundly deep flavor.
