Our Commitment

Traditional Hatcho Miso

Made with Hatcho miso aged over two years in large wooden barrels using only soybeans. The longer it simmers, the deeper the body and umami become.

Artisan Fresh Noodles

Pour 500ml of water into a pot and bring it to a boil.

Cook the noodles

Loosen and add the noodles, then boil for 2 minutes 30 seconds.

Add soup and simmer

Add the included soup and simmer for another 1 minute 30 seconds, stirring occasionally with chopsticks so the noodles do not stick to the bottom.

Serve and enjoy

Turn off the heat, transfer to a bowl, and it is ready.

Tuned to the sweeter, milder taste of local Singapore laksa. Coconut milk joins a red-miso soup steeped with shrimp stock. Squeeze lime to taste for a bright finish.

  • Hot water500ml
  • Udon noodles100g
  • Miso soup base1 packet
  • Coconut milk100ml
  • Shrimp4–6
  • Sugar0.5–1g
  • Fish sauce1/2 tsp
  • Chili sauce1–2 tsp (optional)
  • Limeto taste (optional)
  • Blanched bean sproutsto taste (optional)

Directions

    Put 400ml water and the shrimp in a pot and heat over medium for 1–2 minutes

    Add 100ml coconut milk and reduce to low heat

    Add 55g miso soup base and stir until dissolved

    Add 100g fresh noodles and simmer for 1 minute 30 seconds

    Season with 0.5–1g sugar, 1/2 tsp fish sauce, and 1–2 tsp chili sauce

    Transfer to a bowl. Squeeze lime and add bean sprouts and cilantro to taste
